The Calendar application on your iPod Touch provides calendar event synchronization as well as the ability to create new events in the application, according to the official Apple iPod Touch iOS 4 user guide. As long as you are connected to a Wi-Fi network, the iPod Touch is able to send out invitations to your invitees via email. Once your invited guest receives the email and responds, his availability will display in the event window in the Calendar application.
