Click your Shuffle's name in the left panel on the main iTunes window. On the main window, there is now be a list of any songs that are already loaded on your Shuffle. If this is your first time loading songs, this window will be blank.
Click the load options you want from the control panel at the bottom of the iTunes window. The options include "Autofill From," which allows you to designate a playlist to load; "Randomly Choose Songs," which lets iTunes choose what to load; "Replace All Songs," which means that everything currently on your Shuffle will be cleared before loading; and "Choose Higher Rated Songs More Often," which loads songs you rated with the most stars more often than ones you rated with fewer stars.
