If iTunes does not open automatically, start the iTunes program.
On the far left side of the screen, under the "Devices" heading, you will see the name of your iPod. Click on it and it will open the options for your iPod.
Click on the "Restore" button to restore your iPod. This will reset it to the original factory settings and clear all of the music off of it. Once iTunes has finished restoring your iPod, you can click on the "Sync" button to put all of the music in your iTunes library back onto your iPod if you so choose.
