Choose "iPod" beneath the Devices tab in the iTunes' sidebar, and select "Music" at the top of the iTunes window between "Ringtones" and "Movies."

Once downloaded from the iTunes Store, your audiobooks can be synced to your iPod and will be located in the "Audiobooks" section on your iPod once synchronization is complete.
